Jan Garrabrandt, The Artist's Inn & Gallery, a bed & breakfast in Terre Hill
Although Jan holds no culinary degree, she boasts that she is a "foodie" through and through and delights in playing with her food. She regularly attends cooking classes and explores new restaurants to keep up with current trends. Her recipes have been published in more than a dozen cookbooks.
Using fresh herbs from the breakfast garden and local foods - from milk ,eggs, cheese and produce right off the farm - Jan feels truly blessed to have this all right outside her door. Her husband, Bruce, is a colored pencil artist, hence the name for the inn, and together their creative talents make The Artist's Inn a true gem - in the kitchen, gardens, and art.
This recipe is simple, light and a twist on the traditional strawberry-rhubarb pie - Jan serves it for breakfast frequently in the spring.
Roasted Strawberries & Rhubarb
Ingredients:

1 pound strawberry rhubarb stalks, sliced about ½ inch thick -
About 10 large strawberries sliced in half

3 tablespoons crystallized ginger, chopped fine

1/4 cup juice (orange, mango, pineapple, peach or apricot)

1/4 cup sugar

Ice cream, yogurt, or whipped cream (a dollop per person)
Method:
Preheat oven to 425. Arrange rhubarb in pie plate or shallow baking dish. Sprinkle with ginger, sugar and juice. Bake, stirring twice, for 15 minutes until almost tender. Add the strawberries, stir, and bake for 5 minutes.
Take pan out of oven and make sure everything is covered in the syrup. Scoop into martini glasses and top with vanilla ice cream or yogurt mixed with a little peach schnapps or Amaretto - or whipped cream - or whatever you have on hand. Garnish with mint and an edible flowers.
